Sometimes we don't know what we're missing.

I had the great fortune to eat fresh American-raised escargot at a restaurant last fall. It frankly changed my life. 99% of escargot consumed in the USA is canned and shipped from abroad, but the snails' delicate flesh does not take well to the industrial canning process. The texture becomes rubbery and the flavor stale, so that they must be drowned in garlic parsley butter to make it palatable.

Now that I have had both experiences, I can passionately certify that canned escargot is to fresh as cornflakes are to corn-on-the-cob.

I jokingly conducted some escargot market research for my entrepreneurship class, expecting to find a market in perfect competition like most agriculture. I was dead wrong. Escargot farming is profitable and way below market demand.

My partner and I have formulated a detailed business plan to exploit this opportunity. At Vase Heliciculture, we strive to industrialize the production of snails and change the American diet while we're at it.
